10 Tablespoons butter, divided

1/4 package phyllo leaves, thawed

20 ounces spinach (half of 40-ounce bag)

3 tablespoons chopped onion

1 cup ricotta cheese

1 egg yolk

Salt and pepper

Preheat oven to 375 degrees. Melt 4 tablespoons butter. Unroll phyllo leaves, brush each evenly with melted better and stack. Immediately cover the phyllo with a damp towel to keep moist.
